Cherry-Brushed Duck Breasts
An easy yet elegant way to cook duck. This is a fine dish for Chinese New Year.

2 tablespoons dark sesame oil
2 whole duck breasts, 4 halves, fat trimmed
1 cup cherry barbecue sauce, or other cherry preserve or sauce
4 green onions, sliced into thin strips
2 teaspoons poons minced fresh ginger
salt and pepper, to taste

Preheat the oven to 325 degrees F.

Rub the duck breast with salt and pepper.

Heat the sesame oil in a medium saute pan until it begins to smoke. Sear the duck breast, skin side down, over medium high heat for about 8 minutes, until brown and crispy. Turn and cook on the other side for 7 to 8 minutes.

Transfer the breasts from pan to a shallow baking pan. Brush with American Spoon Foods Cherry BBQ Grilling Sauce and roast for 5 to 8 minutes longer.

Add the green onions and ginger to the saute pan. Cook for 1 minute over high heat. Stir in the remaining 1/4 cup of cherry sauce and when heated through, set aside.

Remove the duck breast from oven, slice each thin and arrange fanned on 4 serving plates. Spoon the pan sauces over the duck breasts.

Serve the duck with a salad of mixed fall greens.

Note: The sauce is delicious spooned over brown rice, which is good with the duck.
