Mexican Potato Skins

6 medium sized all purpose potatoes
1/2 pound ground beef
4 ounces taco sauce
4 ounces Shredded Cheddar cheese
4 ounces sour cream

Bake Potatoes at 400 degrees F. for 45 – 60 minutes. When cooled, quarter and scoop out potato meat and place skin side down on a no stick cookie sheet. Fry ground beef until brown, mix in taco sauce. Scoop seasoned beef onto each Potato Skin. Sprinkle cheese onto skins. Bake at 350 degrees F. for 15 minutes. Serve with sour cream.
