1 tbsp. Vegetable Oil
1 lb. ground turkey
1 1/2 cups Pace® Picante Sauce
1 1/2 tsp. ground cumin
1 pkg. (about 10 ounces) frozen chopped spinach, thawed and well drained
1 pkg. (8 ounces) cream cheese, cubed
12 flour tortillas, (6")
1 can (14 1/2 ounces) diced tomatoes, in juice
1 cup Shredded Cheddar cheese, (4 ounces)

In medium skillet over medium-high heat, heat oil. Add turkey and cook until no longer pink, stirring to separate meat. Pour off fat.

Add 1 cup picante sauce, cumin and spinach. Heat to a boil. Reduce heat to low. Cook 5 minutes. Add cream cheese and stir until melted.

Spread about 1/3 cup spinach mixture down center of eacn tortilla. Roll up and place seam-side down in 3-quart shallow baking dish.

Combine tomatoes and remaining picante sauce. Spoon over enchiladas. Cover and bake at 350°F. for 35 minutes or until hot. Uncover. Top with cheese. Bake 5 minutes more or until cheese is melted. Serve with additional picante sauce.

To thaw spinach, microwave on HIGH 3 minutes, breaking apart with a fork halfway through heating.
