Back-Packer's Lamb Sandwich
Just like its name suggests, easy to take with you and eat on the go! |

6-12 thin slices lamb, cooked
|
1 8 ounce package cream cheese, softened low-fat or no-fat
|
1/3 cup sweet pickles, diced
|
2 tablespoons horseradish
|
1/2 teaspoon garlic salt
|
6 onion rolls
|

Place cream cheese, sweet pickles, horseradish, pickle juice and garlic salt in mixing bowl; whip together until combined and fluffy. Split onion rolls.Spreadeach roll half liberally with the cream cheese mixture. Place one or two slices of lamb on six roll halves; top lamb with remaining rolls. Serve with lettuce and tomato slices. To make ahead, wrap in foil and freeze or chill until ready to use.
