Babysitter Night Tacos
What a wonderful idea when you're leaving the kids with a sitter!  You can prepare the tasty beef filling ahead, and have the sitter reheat when the kids are hungry.
Serves: 4 servings (2 tacos each)
Prep Time: 15 minutes
Cook Time: 20 minutes


1 tablespoon vegetable oil
1 medium onion, diced (about 1/2 cup)
1 pound Ground Beef, turkey or chicken
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano leaves, crushed
1/4 cup Swanson® Beef Broth or Swanson® Beef Stock
ground black pepper
8 taco shell or 8-inch flour tortillas, warmed
Assorted Toppings (shredded Monterey Jack or Cheddar cheese, chopped tomatoes, shredded lettuce, chopped green onion, seeded sliced jalapeño peppers, sliced ripe olives, sour cream, guacamole and/or Pace® Chunky Salsa)

Heat the oil in a 12-inch skillet over medium-high heat.  Add the onion and cook until tender, stirring occasionally.  Add the beef to the skillet and cook until the beef is well browned, stirring often to separate meat.  Pour off any fat.
Stir the chili powder, cumin, oregano and broth in the skillet and cook for 5 minutes. Season with the black pepper. Remove the skillet from the heat.
Spoon the beef mixture into the taco shells. Top with the Assorted Toppings.
