Simple Green Salad with Mustard Dressing
When you want a very simple salad, this one fits the bill. Use whatever greens look freshest and best in the market. |

2 tablespoons red wine vinegar
|
1 to 2 teaspoons mustard
|
4 tablespoons extra virgin olive oil
|
Salt and freshly ground pepper
|
8 to 10 cups leafy greens, such as romaine, red leaf, arugula, cress, and radicchio
|
2 to 3 scallions, thinly sliced, white and green parts
|

In a small bowl, whisk together the vinegar and mustard. Slowly add the olive oil, whisking continuously until emulsified. Season to taste with salt and pepper.
Put the greens in a salad bowl. Add the scallions and toss to mix.
Whisk the dressing again and drizzle over the salad, tossing until lightly coated. Serve immediately.
