1/2 cup milk
3 large eggs
1/4 cup chopped fresh parsley
1/2 onion, small, halved
1 1/2 teaspoons salt
freshly ground pepper
4 tablespoons unsalted butter, melted
1 cup Cheddar cheese, diced
3 russet potatoes, medium, peeled and quartered

Preheat oven to 350 degrees. Grease a 1 1/2-qurat casserole. Blend milk, eggs, parsley, onion, salt, pepper, butter, and cheese in a food processor. Add potatoes, 1 cup at a time, unti potatoes are blended. Pour into prepared casserole. Bake 1 hour.
