1 1/2 cups wild rice
4 1/2 cups cold water or broth
salt, to taste

Place the rice in a fine-mesh strainer and rinse under cold running water. When the water runs clear, drain the rice.

In a heavy-bottomed, medium-size saucepan, bring the water or broth to a boil over high heat. Stir in the rice and add salt to taste. Return to a boil, stir and cover. Reduce the heat to low and cook for about forty minutes, or until the rice is tender and the outer hulls crack to expose the white interiors. Remove the rice from the heat and let stand, covered, for about 10 minutes. Drain.
