1 1/2 cups long- or medium-grain white rice
3 cups cold water or broth
salt, to taste

In a microwave-safe 1 1/2 quart baking dish, stir together the rice, water or broth, and salt to taste(if using canned broth, you may not need salt). Cover tightly and microwave on high (100 percent) power for about 5 minutes, or until the liquid is boiling. Carefully uncover and stir the rice. Recover and microwave on medium (50 percent) power for 18 minutes, or until rice is tender and all the liquid has been absorbed. Let the rice stand, covered, for 3 to 4 minutes. Fluff the rice with a fork before serving.
