Mexican Rice
This is a delicious rice dish that goes great with any meal.

2 tablespoons shortening
1 cup rice, uncooked
3 tablespoons onion, finely chopped
1 clove garlic, minced (optional)
1 cup canned tomatoes, or tomato juice; or 1 large, fresh tomato, peeled and chopped
2 teaspoons salt
3 cups water

Put shortening in heavy frying pan or Dutch oven; heat, and add rice. Cook over medium heat, stirring frequently, until rice turns brown and begins to soften. Add onion, garlic, tomatoes, salt and water. Cover, and reduce heat. Allow to simmer about 30 minutes, or until rice is tenderr. Remove cover and let rice dry out. If rice becomes too dry, add a little water. (Some like this rice slighly moist; others prefer it quite dry.) Do not stir rice anymore than is necessary to keep it from sticking to pan.
