Chilled Asparagus with Ginger Dressing

1/4 cup white wine vinegar
2 teaspoons Dijon mustard
3 tablespoons minced crystallized ginger
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 cup Vegetable Oil
2 pounds asparagus, trimmed, blanched, and chilled
lettuce leaves

Ginger Dressing: Blend vinegar, mustard, ginger, salt, and pepper in a food processor. With machine running, add oil slowly in a thin stream.

When ready to serve, arrange asparagus on a bed of lettuce and drizzle with Ginger Dressing.

Blanch vegetables by placing them in boiling water 1 to 2 minutes. Plunge into ice water, drain and chill.
