Fruited Sweet-and-Sour Pork

1 1/2 pounds pork, sliced in thin strips
2 tablespoons butter
1 can (13 1/2 ounces) pineapple tidbits, with syrup
1/2 cup Russian salad dressing, bottled
3/4 cup water
2 tablespoons cornstarch
1 1/2 tablespoons soy sauce
1 teaspoons vinegar
1/4 teaspoon salt
1 medium green pepper, thinly sliced
1/2 cup onion, thinly sliced

Saute pork in butter for 2-3 minutes, until meat is browned. Drain pineapple, reserving 3/4 cup syrup. Combine syrup, Russian dressing, water, cornstarch, soy sauce, vinegar and salt. Pour over meat and stir until thickened. Cover and simmer over low heat 30 minutes, or until meat is tender. Add green pepper, onion and pineapple tidbits. Cover and heat 5 minutes. Serve over rice.
