Smoked Salmon Mousse

1 pound smoked salmon
1/4 cup lemon juice
1 cup butter, melted
1 cup sour cream
salt and pepper, to taste
capers, for garnish
Lemon wedges, for garnish

Puree salmon in blender or food processor. Add the
lemon juice. With machine on, add the butter, a
little at a time. Transfer to a mixing bowl.

Gently fold in the sour cream. Season to taste with salt and pepper. Pack into a refrigerator-safe crock or serving dish that is just large enough for the mousse. Cover with plastic wrap and refrigerate for at least 8 hours and up to 24 hours.

Garnish with capers and lemon wedges. Serve with
plain crackers or toast points.
