1 pound fresh mushrooms, sliced
2 tablespoons onion, finely chopped
1 teaspoon paprika
1/4 cup butter
1/4 teaspoon salt, or to taste
Dash cayenne
2 tablespoons flour
1/4 cup white wine
1 cup sour cream
Tabasco, to taste (optional)
pepper, to taste (optional)
6 puff pastry shells

Saute mushrooms, onions, and paprika in butter
until tender. Season with salt and cayenne. Stir
in flour, and cook for 1 minute. Add wine, then
sour cream. Bring almost to a boil but do not
allow to boil or sour cream will curdle. Taste
and add seasonings as desired. Serve in puff
shells or in a chafing dish with toasted melba
