Fried Won Tons with Sweet and Sour Sauce

1 package won ton wrappers
|
1 cup plus 2 tablespoons water
|
1/3 cup cider vinegar
|
1/2 cup brown sugar
|
1/8 teaspon salt
|
1/4 teaspoon soy sauce
|
1 tablespoon ketchup
|
2 tablespoons cornstarch
|
2 tablespoons water
|

In Dutch oven or deep-fat fryer, heat oil until very hot. Drop wrappers, one at a time, into hot oil. When they begin to brown (about 2 minutes), remove and drain. Combine water, vinegar, brown sugar, salt, soy sauce, and ketchup. Bring to a fast boil. Combine cornstarch and water and add to mixture. Continue cooking, stirring constantly, until mixture thickens. Serve with fried won ton wrappers for dipping.
