1 tablespoon oil
5 tablespoons butter
8 ounces fresh mushrooms, sliced
1 cup julienne strips ham
1 cup cooked, fresh or frozen green peas
8 ounces spinach fettucini noodles
8 ounces egg fettucini noodles
1/2 cup finely grated Parmesan cheese
1/2 cup finely grated Swiss cheese
1 pint (or more) heavy cream, warmed
Salt and freshly ground pepper, to taste

In oil and 1 tablespoon of the butter, saute mushrooms briefly over high heat. Reduce heat, add ham and peas, and keep warm. Boil noodles until just tender. Drain and return to the pot over low heat. Add the remaining 4 tablespoons butter and the cheeses. Toss with noodles, while adding enough warm cream to reach desired consistency. Add the mushroom mixture, salt, and pepper. Serve immediately.
