Vegetarian Roasted Portabella on Polenta
Portabella mushrooms with garlic, olive oil, rosemary and mixed fresh vegetables.

3 large portabella mushrooms
6 tablespoons olive oil
6 cloves garlic, peeled
9 rosemary sprigs
3 cups assorted vegetables, fresh diced artichokes, corn, tomatoes, asparagus

Rub Portabella mushrooms with olive oil and wrap in aluminum foil with slivered garlic and rosemary. Bake in oven at 375 degrees for 35 minutes. Remove from oven and unwrap mushrooms. Slice mushrooms lengthwise, (as if slicing a steak) and serve fanned over polenta. Garnish with sauteed fresh vegetables and serve piping hot.
