Pork Medallions with Red Spoon Pepper

8 3 ounce pork medallions cut from tenderloin
1 cup white wine
1 onion, halved and sliced thin
2 tablespoons peanut oil
1 jar American Spoon Red Spoon Pepper®
1 tablesoon fresh cilantro
Salt and freshly ground pepper

Preheat oven to 200. Season medallions with salt and pepper. Heat oil in a large sautè pan, carefully add pork and sautè over medium heat for 3 to 4 minutes on each side, lightly browning pork. Remove pork from pan and keep warm in preheated oven. Add onions and sautè on medium heat for 8 to 10 minutes, stirring often. Add white wine and cook over high heat for approximately 3 to 5 minutes or until wine has reduced by one half. Reduce heat, add Red Spoon Pepper® and browned pork from oven, simmer for 5 minutes turning pork and stirring sauce occasionally. Spoon sauce onto 4 serving plates and place 2 pork medallions on each plate. Dust with chopped cilantro and serve hot.
