Apricot Coffee Cake

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/2 cup American Spoon Apricot Preserves
6 Tablespoons American Spoon Apricot Spoon Fruit®
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup chopped walnuts
1/4 cup light brown sugar, (packed)

Preheat oven to 350. Prepare a 9 inch round cake pan with non-stick cooking spray. In a small mixing bowl, combine preserves, chopped walnuts and brown sugar. Mix well and set aside. In a large bowl, stir together the flour, baking powder and salt. In a medium bowl, whisk eggs, then add the Spoon Fruit®, sugar and vanilla. Whisk until blended. Add this egg mixture to the dry ingredients in the large bowl and stir together until evenly blended, but do not over mix. Spoon half of the mixture into prepared pan and spread evenly. Add the preserves mixture and spread evenly over the top of the preserves mixture and allow to settle evenly to creative an attractive appearance. Bake for about 45 minutes until golden brown and just beginning to pull away from the sides of the pan. Cool for about 15 minutes and serve warm.
