Turkey and Rice Roulade

8 turkey cutlets
2 cups rice pilaf, cooked
2 Tablespoons onion, diced
4 teaspoons American Spoon Dried Cranberries
2 tablespoon chopped fresh cilantro
1 jar American Spoon Foods Pumpkin Chipotle Roasting Sauce
salt and pepper, to taste

Preheat oven to 375¡F. Combine the rice pilaf,onion,dried cranberries,cilantro and 1 cup of the Pumpkin Chipotle Roasting Sauce.Mix well. Rub the turkey cutlets with salt and pepper. Spoon equal amounts of the rice mixture onto turkey cutlets. Roll each of the turkey cutlets keeping the rice mixture in the center and place on a cookie sheet seam side down.

Generously brush additional Pumpkin Chipotle Roasting Sauce over the top of each roulade. Place in the center of preheated oven and roast for about 20 to 25 minutes. Remove from oven garnish with additional cilantro. Serve hot.
