Layered pasta Frittata

1/2 pound vermicelli
|
2 tablespoons margarine, room temperature
|
5 eggs
|
2 tablespoons parsley flakes
|
salt and pepper, to taste
|
3 tablespoons margarine
|
1 cup spaghetti sauce
|
1 cup mozzarella cheese, cut into 3/8-inch cubes
|
1/3 cup Parmesan cheese
|
parsley, for garnishing
|

Cook vermicelli according to package directions; drain. In large bowl toss vermicelli with 2 tablespoons margarine. Cool completely. Preheat boiler. Beat 5 eggs in large bowl. Combine vermicelli, 1/4 cup Parmesan, and dried parsley with beaten eggs. Season with salt and pepper. Heat tablespoons margarine in heavy 12-inch skillet, preferably nonstick, over high heat. Spread spaghetti sauce over vermicelli leaving 1/2-inch border. Sprinkle cubed mozzarella cheese and 1/3 cup Parmesan cheese over spaghetti sauce. Top wth remaining pasta egg mixture, spreading to edges of pan. Cook until mixture is almost set and bottom is golden brown, about 3 minutes. Broil frittata 2 inches from heat source until top is softly set and golden brown, about 1 minute. Do not overcook. Sprinkle parsley over top to garnish.
