1 1/4 to 1 1/2 pounds boneless American shoulder chops, arm or blade, 1/2-3/4 inch thick, trimmed
3 tablespoons soy sauce
2 tablespoons lime juice, or lemon juice
2 tablespoons honey
1 teaspoon cumin
2 tablespoons creamy peanut butter
1 tablespoon honey, or molasses
1 cloves garlic, minced
1 teaspoon soy sauce
1/8 teaspoon cayenne pepper




MARINADE: combine soy sauce, lime juice, water, honey, and cumin. Place chops in a shallow glass dish; pour marinade over chops. Turn to coat. Cover and refrigerate 4 to 24 hours, turning occasionally.
SAUCE: in a small saucepan, combine broth and peanut butter. Cook and stir over medium heat until blended. Stir in honey or molasses, garlic, soy sauce, and cayenne. Cook 1 minute; keep warm.

Remove chops from marinade; place on an open grill about 4 inches from coals at a moderate temperature. Grill 5 to 7 minutes on each side until done. Serve chops with peanut sauce. Makes 4 servings.
