Sweet Potato Cranberry Stew

2 teaspoons Crisco® Vegetable Oil
1 pound lean pork, cut into 1 inch cubes
3 teaspoons brown sugar
2 sweet potatoes, peeled and cut into chunks
1/2 teaspoon ground allspice
1/4 teaspoon black pepper
3/4 cup chicken stock
2 cups cranberries

In a medium (2 quart) saucepan, heat oil over medium heat until very hot. Add pork and sugar. Stir until lightly brown, about 10 minutes. Remove and set aside. Add sweet potatoes, allspice, pepper and stock (or bouillon with water). Simmer covered over low heat for 15 minutes. Add cranberries and pork and simmer covered over low heat for 15 mintues. This stew freezes well.
