Sweet Chicken Risotto

3/4 cup onion, chopped
3/4 pound chicken breast, thinly sliced
1 tablespoon Crisco® Vegetable Oil
2 cups instant rice, uncooked
1 tablespoon prepared horseradish
4 teaspoons sugar
1 sweet green pepper, sliced
1 sweet red pepper, sliced
14 ounces canned black beans, rinsed and drained
1/4 cup Grated Parmesan cheese

In a large skillet (3-4 quarts), saute onion and chicken in oil for five minutes. Add rice, chicken broth, horseradish and sugar. Simmer covered for 15 minutes or until rice is tender (there should be extra liquid). Add peppers and black beans. Simmer for five minutes. Sprinkle with parmesan cheese before serving.
