Spicy Lamb and Black Bean Stew

8 ounces boneless lamb, cut into 3/4-inch cubes
Non-stick cooking spray
1/2 cup green onion, sliced
1 clove garlic, minced
1 8 oz. can low sodium tomato sauce
1 15 oz. can black beans, drained and rinsed
1 medium zucchini, halved lengthwise and sliced (1 1/2 cup)
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper, optional
1 1/3 cups hot cooked rice

Spray a large saucepan with non-stick spray. Stir-fry lamb cubes, green onion and garlic until meat is browned, 5-8 minutes. Stir in tomatoes and chilies, tomato sauce, black beans, zucchini and pepper. Cover and simmer 10 to 15 minutes or until meat and zucchini are tender. For each serving, spoon into shallow bowl and place a scoop of hot rice in the center.
