Couscous With Curried Chicken
THis is a native Moraccan dish.

1 Tablespoon olive oil
1 pound boneless skinless chicken breasts, cut into strips
1 16 ounce package frozen mixed vegetables, thawed and drained
1 can (15 ounces) garbanzo beans, drained
1 teaspoon chicken bouillon
1 cup water
2-3 teaspoons curry powder
1 teaspoon cumin
1 1/2 cups water
2 Tablespoons margarine or butter
1 teaspoon chicken bouillon
1 cup couscous, uncooked
1 Tablespoon fresh parsley, chopped




Chicken mixture:
Heat oil in large skillet or Dutch oven over medium-high heat. Add chicken; cook and stir 6 to 9 minutes or until chicken is no longer pink, stirring constantly. Add vegetables, beans, bouillon, water, curry and cumin. Bring to a boil. Reduce heat; cover and simmer 8 minutes or until vegetables are tender.

Couscous:

Meanwhile, in medium saucepan combine water, margarine and bouillon; bring to a boil. Stir in couscous. Cover; remove form heat. Let stand 5 minutes. Before serving, fluff mixture with fork; spoon onto platter. Top with chicken mixture; sprinkle with parsley.


Notes:
Ingredient #9-13 are for the Couscous.
