2 1/2 pounds apple, peeled, cored, and cut into ¼-inch-thick wedges
1/2 cup water
1/3 cup sugar
Pinch of ground cinnamon
Pinch of ground nutmeg

Stir the apples, water, sugar, cinnamon and nutmeg in a 6-quart pressure cooker. Close the cooker. Heat over high heat to high pressure.
Remove the cooker from the heat and quick-release the pressure. Open the cooker lid.  Coarsely mash the apples.  Heat, uncovered, over medium-high heat to a boil.  Cook for 5 minutes or until the applesauce is thickened.
