Slow-Baked Tomatoes
Summer tomatoes are delicious any way you serve them, but these baked tomatoes, with a hint of garlic, are particularly sweet and luscious.

4 large tomatoes, cut in half crosswise
1/4 cup olive oil
2 cloves garlic, minced
kosher salt
cracked black pepper

Place the tomato halves on a baking sheet, cut side up. Drizzle the olive oil evenly over the tomatoes and evenly top with the minced garlic. Season to taste with the salt and pepper.
Bake at 350°F. for 1 hour or until the tomatoes are soft. Serve the tomatoes warm or at room temperature.
Alternate Preparation: For sweeter, more intensely flavored tomatoes, bake them at 250°F. for 4 to 5 hours or until they dry out around the edges.
