Raspberry Ganache
This simple, flavorful ganache, makes a great filling for cakes, or you can heat it up and use it as a sauce.  Either way, it's exceptionally good.

3/4 cup heavy cream
6 tablespoons (3/4 stick) unsalted butter, cut into pieces
9 ounces bittersweet chocolate, coarsely chopped
1/4 cup seedless raspberry preserves

Heat the cream and butter in a 2-quart saucepan over medium heat until the cream starts to boil and the butter melts, stirring often.
Place the chocolate in a food processor and process until it's finely chopped. Gradually add the hot cream and process until the mixture is smooth.
Add the raspberry preserves and process for a few seconds until well mixed. Transfer the mixture to a metal bowl and set aside to cool, stirring occasionally.
When ready to use, stir the mixture with a fork or whisk. Spread the ganache between 2 cake layers, as a filling.
