1 tablespoon olive oil

1 tablespoon chopped shallot
|
2 medium avocado, pitted, peeled and cut up

2 cups Swanson® Chicken Broth (Regular, Natural Goodness® or Certified Organic)
|
1 cup heavy cream
|
1/4 teaspoon ground nutmeg
|
1 medium tomato, diced (about 1 cup)
|

Heat the oil in an 8-inch skillet over medium heat. Add the shallot and cook until tender, stirring occasionally. Place the avocados into a food processor or blender. Cover and blend until smooth.
Stir the avocados, broth, heavy cream, nutmeg and shallot in a large bowl. Cover and refrigerate for 30 minutes. Sprinkle with the tomato before serving.
