Red Rice and Beans
Tomato juice is the secret to this tender and flavorful rice and bean dish.  It's a fabulous choice when you're looking for something meatless.

1 tablespoon vegetable oil
1 large onion, chopped (about 1 cup)
1/2 teaspoon garlic powder or 2 cloves garlic, minced
1/8 teaspoon ground red pepper
1 cup Campbell's® Tomato Juice
1 can (about 15 ounces) kidney beans, rinsed and drained
1 cup regular long-grain white rice, cooked according to package directions (about 3 cups)




Heat the oil in a 3-quart saucepan over medium heat. Add the onion, garlic powder and pepper and cook until the onion is tender, stirring occasionally.
Add the tomato juice and beans and heat to a boil. Reduce the heat to low and cook for 5 minutes. Stir in the rice and heat through.
