12 tablespoons fresh herbs, tarragon, parlsey, chives, thyme
9 ounces arugula, washed and dried
9 ounces radicchio leaves, washed and dried
9 ounces oakleaf, washed and dried
12 tablespoons tomatoes, peeled and diced
12 tablespoons shallots, chopped
1 3/4 cups olive oil
1 cup balsamic vinegar
1 pound shiitake mushrooms, sliced
1 pound crimini mushrooms, sliced
1 pound oyster mushrooms, sliced
1 1/2 extra virgin olive oil, cups
12 tablespoons pine nuts

Place oil in pan, heat thoroughly. Add mushrooms; saute until cooked. Add vinaigrette to pan; toss. Add herbs to pan; toss. Place hot mushrooms in bowl with lettuce; toss. Add nuts and concasse of tomatoes. To serve, divide into 12 plates, layering mushrooms on top. Vinaigrette: Combine shallots, oil, vinegar and salt and pepper to taste.
