Warm Spinach Salad

1 large bunch fresh spinach, washed with stems removed
1 package, fresh enoki mushrooms
4 slices bacon, cut into 1/2'' pieces
1/4 cup sugar
.13 teaspoon black pepper
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
1 large egg, hard-boiled, grated
2 tablespoons parsley, finely chopped
1 small onion, finely chopped

Combine spinach and Enoki mushrooms in large salad bowl. Cover with damp paper towels and chill to crisp. Brown bacon pieces and stir to separte. Add onion, saute over medium-low heat until tender. Stir in parsley, sugar, pepper, vinegar and lemon juice. Bring to a boil, stirring to dissolve sugar. Pour immediately over crisp spinach and Enoki mushrooms. Toss lightly. Sprinkle with egg.
