Sesame Turkey Salad

3 cups rice, cooked
2 cups turkey breast, cooked, cut into strips
1/4 pound snow peas, fresh, trimmed and cut into julienned strips
1 medium cucumber, peeled, seeded, and cut into 1-1/2x1/4 inch strips
1 medium red pepper, cut into 1-1/2x1/4 inch strips
1/2 cup green onion, sliced
1 tablespoon peanut oil
3 tablspoons rice vinegar
3 tablespoons low sodium soy sauce
1 teaspoon sesame oil
1 head lettuce, shredded
2 tablespoons sesame seeds, toasted, optional

Combine rice, turkey, peas, cucumbers, pepper, onions and sesame seeds in large bowl. Combine broth, peanut oil, vinegar, soy sauce and sesame oil. Pour over rice-turkey mixture; toss lightly. Serve over shredded lettuce at room temperature or slightly chilled.
