3 cups cooked rice, cooled
1 1/2 cups (about 1 whole breast) Boneless Chicken breasts, cooked, cubed
1 cup celery, sliced
1 8 ounce can water chestnuts, sliced, drained
1/2 cup fresh mushrooms, sliced
1/4 cup green onions, sliced
1/4 cup red bell pepper, diced
1/4 cup black olives, sliced
2 tablespoons Crisco® Vegetable Oil
2 tablespoons lemon juice
1 tablespoon soy sauce
1/2 teaspoon ground ginger
1/4 to 1/2 teaspoon ground white pepper
to taste lettuce leaves

Combine rice, chicken, celery, water chestnuts, mushrooms, onions, red pepper and olives in large bowl. Place oil, lemon juice, soy sauce, ginger and white pepper in small jar; shake well. Pour over rice mixture. Toss lightly. Serve on lettuce leaves.
