5 small russet potato
|
1 cup salsa
|
1 to 2 cups Shredded Cheddar cheese
|
sour cream, for topping
|
feta cheese, for topping
|
black olives, sliced, for topping
|
onion, sliced, for topping
|

Preheat oven to 400° F. Wash potatoes and slice each crosswise, discarding ends; each potato will yield 7 to 8 round slices, about 1/4 inch thick each. Spray baking sheet with butter-flavored cooking spray. Lay potato slices on baking sheet. Bake for 10 to 15 minutes, until potatoes are tender. Remove pan from oven and reduce oven heat to 350° F. Top potato slices with salsa and cheese; bake for an additional 5 to 10 minutes or until cheese melts and potatoes are slightly crisp. Top immediately with sour cream or feta cheese as a base. Then add your choice of: sliced black olives, purple onion slivers, capers, pepperonicci, sliced jalapeno peppers, green onion slices. Serve hot.
