Cream Cheese and Chives Mashed Potatoes

2 1/2 lbs. (about 8 medium) all purpose potatoes, peeled and cut into 1-inch cubes
1 (8-ounce) package cream cheese, cut into 1-inch cubes, softened
3/4 to 1 cup milk
1/2 cup chopped fresh chives, (or 2 tablespoons dried chopped chives)
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper

Boil potatoes, covered, in a medium saucepan in 2 inches of water for 10 to 12 minutes, or until tender. Drain thoroughly.

Mash potatoes with electric mixer or potato masher, gradually stirring in cream cheese until blended. Mix in chives, salt and pepper. Stir gently over medium heat until heated through. Serve immediately.
