Swiss Cream of Potato Soup

4 potatoes, peeled
2 slices bacon, diced
1/3 cup onion, finely chopped
1 tablespoon parsley, minced
1 1/2 teaspoon salt
1 1/2 teaspoon nutmeg
1/4 teaspoon dry mustard
3 cups milk
Swiss cheese, grated

Boil potatoes until tender. Fry bacon and onion over low heat. Mash potatoes and then add bacon, onion, parsley, salt, nutmeg and mustard. Stir in milk over low heat, stirring frequently, until hot. Do not boil. Sprinkle each serving with cheese before serving.
