2 fresh apricots, ripe, pitted
2 tablespoons white wine vinegar
1 tablespoon sugar
1/4 cup Crisco® Vegetable Oil
1 tablespoon fresh basil, chopped
4 ounces pasta, corkscrew
6 (3/4 pound) fresh apricots, cut into quarters
1 whole chicken breast, cooked and shredded
2 small (1/2 pound) zucchini, julienned
1 red bell pepper, julienned
1 tablespoon fresh basil, chopped

For apricot basil dressing: Combine apricots, white wine vinegar, and sugar in blender; whirl until blended. With blender running, slowly add 1/4 cup vegetable oil until thick and smooth.
Stir in 1 tablespoon chopped fresh basil or 1 teaspoon dried basil.

Cook pasta as package directs; drain and let cool. Combine pasta, apricots, chicken, zucchini, red pepper, and basil in bowl. Toss with dressing.
