Simple Spicy Lamb Roast

1 tablespoon olive oil
1/3 cup apple juice
1 teaspoon dried oregano leaves, crushed
1/8 teaspoon ground dried ginger
2 tablespoons light soy sauce
1/8 teaspoon red pepper flakes, crushed
1 clove garlic, finely minced
2-3 pounds leg of lamb, (1/2 leg sirloin or shank half)

Combine oil, apple juice, oregano, ginger, soy sauce, red pepper flakes and garlic. Place lamb on rack in roasting pan. Brush lamb generousely with marinade. Insert meat thermometer into the thickest part of meat, making sure thermometer doesn't touch bone. Roast at 350 degrees for 25-30 minutes per pound until internal temperature reaches 150 degrees for medium rare or 160 for medium. Brush with remaining marinade several times while roasting. Remove from oven and cover with foil to keep warm. Let stand for 10 minutes before slicing.
