1/2 cup fresh parsley, chopped
1/2 teaspoon thyme, ground
2 tablespoons green onions, chopped
1 large clove garlic, minced
1/4 teaspoon ginger, powdered
1 teaspoon salt
1/4 teaspoon ground black pepper, coarsely ground
1 (4-6 pounds) leg of lamb, boneless

Mix all ingredients well. Remove netting from boned, rolled leg of lamb and unroll. Spread the ingredients evenly over the lamb. Reroll and return to netting. Roast on rack in preheated 325-degree oven for 20-25 minutes per pound to 145-150 degrees internal temperature. Remove from oven; cover lightly; and let set 15 minutes. Temperature will rise approximately 10 degrees.
