Savory Lamb Potatoes

4 medium baking potatoes, (about 1 1/2 pounds)
Vegetable cooking spray
1 tablespoon water
1/4 cup onion, chopped
1/2 cup carrot, sliced (1/8-inch slices)
1/2 cup celery, sliced (1/4-inch slices)
1 pound ground lamb, lean
1 cup tomato sauce
1 teaspoon Worcestershire sauce

Pierce potatoes and place in 400 degree oven for 40-60 minutes, until easily pierced with a fork. On very low heat in saucepan sprayed with vegetable cooking spray coating, add water and cook onion, carrot and celery on low heat until softened. Add lamb, cook until brown; drain drippings. Stir in tomato sauce and Worcestershire sauce, heat to a simmer and cook 2-3 minutes. Split baked potatoes down center, press open and top with lamb mixture.
