Mushroom Onion Casserole

5 cups sliced fresh white mushrooms
5 tablespoons butter
1 tablespoon fresh lemon juice
4 cups sliced onion
Salt and freshly ground pepper, to taste
3 cups diced tomatoes
2 cups fresh bread crumbs
3 tablespoons butter, melted

Preheat the oven to 350 degrees F.

Saute the mushrooms in 3 tablespoons of the butter over medium heat for about 3 minutes until softened. Add the lemon juice and stir to mix. Set aside.

In another pan, melt the remaining 2 tablespoons of butter over medium-high heat and saute the onions for about 5 minutes until transparent. Transfer to a 10"x6"x2" baking dish and spread in an even layer. Spoon the mushrooms over the onions in an even layer and season lightly with salt and pepper.

In the same pan, cook the tomatoes and 1 cup of the bread crumbs over medium heat, tossing just until the tomatoes begin to soften and bread turns golden. Season with salt and pepper to taste. Spoon evenly over the vegetables.

Toss the remaining cup of bread crumbs with the melted butter. Sprinkle over the top of the casserole.

Bake for about 30 minutes until lightly browned, bubbling, and heated through
