Orange Sesame Couscous

1 cup fresh orange juice
1/2 cup chopped red bell peppers
1 teaspoon Asian sesame oil
1/8 teaspoon salt
2/3 cup couscous, (pre-cooked semolina)
1 orange, peeled, cut into bite-size pieces
3 tablespoons chopped green onion

In medium saucepan, combine the orange juice, red pepper, sesame oil and salt. Bring to a boil and immediately stir in the couscous.

Cover, remove from the heat and let the couscous stand for 5 minutes to absorb the liquid. Fluff with a fork.

Stir in the orange pieces and green onion and serve immediately.
