Tacos con Puerco

1 pound ground pork
8 ounces canned tomatoes, drained, juices reserved, tomatoes chopped
1/4 cup chopped onion
1 tablespoon chili powder
1/4 teaspoon garlic powder
salt, to taste
fresh ground black pepper, to taste
8 taco shells
2 cups shredded iceberg lettuce
2 tomatoes, coarsely chopped
2 ounces Cheddar cheese, shredded or thinly sliced

In a heavy skillet, brown the pork, stirring, until it loses most of its pinkness. Stir in the tomatoes and their juice, onion, chili powder, and garlic powder. Bring to a boil; reduce the heat and simmer, uncovered, for about 15 minutes or until most of the liquid evaporates. Season to taste with salt and pepper.

Heat the taco shells in a warm oven and spoon the filling into the shells. Top with the lettuce, tomatoes, and shredded cheese.
