Italian-Style Poached Pears and Oranges

4 Bosc pears
fresh lemon juice, from 1/2 lemon
1 cup ginger ale, or white grape juice
grated orange zest, from 1/2 orange
1 cinnamon stick
2 teaspoons cornstarch
2 tablespoons Triple Sec, or other orange-flavored liqueur
2 oranges, peeled, cut in half-cartwheels slices, drained
fresh mint, for garnish

Cut a thick slice off bottom of each pear. With apple corer, remove core of each pear from bottom (do not push corer all the way through pear), leaving stem intact. Peel pears. Place upright in large saucepan. Sprinkle pears with lemon juice. Add ginger ale, orange zest and cinnamon to pan; bring to boil. Reduce heat; cover and simmer 20 minutes or until pears are just tender. Remove pears to individual dessert dishes. Discard cinnamon stick Dissolve cornstarch in orange liqueur; stir into liquid in pan. Heat, stirring until slightly thickened. Add drained orange half-cartwheel slices; heat just until oranges are warmed through. Spoon sauce over and orange around pears. Garnish with mint leaves. Serve warm.
