1 pound ziti, uncooked (or any medium pasta shape)
1 head broccoli, cut into small florets (or cauliflower)
1 tablespoon cornstarch
1/4 cup water
3 cloves garlic, minced
1 fifteen-ounce can low sodium chicken broth
1 ten-ounce package frozen mixed vegetables
1 ten-ounce package frozen spinach, thawed
salt, to taste
fresh ground black pepper, to taste
1 cup Grated Parmesan cheese

Prepare the pasta according to package directions. Three minutes before the pasta is done, stir in the broccoli or cauliflower. Drain the pasta and vegetables and transfer to a large bowl.

In a small bowl, dissolve the cornstarch in 1/4 cup of water. Put the garlic in a large saucepan with chicken broth. Simmer over medium heat for 3 minutes. Whisk in the cornstarch. Stir in the mixed vegetables and spinach and cook until hot, about 5 minutes.

Toss the sauce and vegetables with the pasta, season with salt and pepper, sprinkle with Parmesan cheese, and serve.
