Stir-Fried Turkey Breast

1 1/2 pounds boneless and skinless turkey breast, cut into strips
2 tablespoons sesame oil
1 tablespoon soy sauce
1 teaspoon honey
1/4 teaspoon dried cumin
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
2 tablespoons peanut oil
6 scallions, chopped
1/2 cup peanuts

Put the turkey strips in a bowl. Add the sesame oil, soy sauce, honey, cumin, black pepper and cayenne. Mix to coat the turkey. Cover the bowl and refrigerate for 2 hours.

Heat the peanut oil in a wok or large skillet over high heat. Add the turkey and stir-fry for 5 minutes. Add the scallions and peanuts and cook, tossing, for 8 or 9 minutes more. Season to taste with salt.
