Roasted Garlic Potatoes with Herbs in Parchment Packets
These potatoes are paired with garlic, herbs and less than a tenth of a gram of fat per serving. |

1 pound new red potatoes, unpeeled, sliced
|
1/4 teaspoon salt
|
1/8 teaspoon black pepper, freshly ground
|
18 cloves garlic, peeled
|
6 fresh sage leaves
|
6 sprigs (2-inches each) fresh rosemary
|

Preheat the oven to 375 degrees.
Combine the potatoes, salt, and pepper in a large bowl. Mix and set aside.
Cut six 8 x 12-inch rectangles of baker's parchment. Fold each in half crosswise, crease the parchment to form a seam, and open. Put 1/2 cup of the seasoned potatoes in the center of each packet, along the seam. Add 3 cloves of garlic, 1 sage leaf, and 1 sprig of rosemary.
To seal the packets, grasp both ends of the parchment opposite the inner seam and fold down about 1/4-inch. Fold in the sides and fold the corners over to secure.
Place the packets on a baking sheet and bake for about 30 minutes, until a toothpick can be inserted easily into the potatoes. Slit the parchment packets open just before serving.
