Raspberry Sauce

1 (10-ounce) package unsweetened frozen raspberries, defrosted
2 tablespoons lemon juice
1 to 2 tablespoons superfine sugar
1 tablespoon cornstarch
2 tablespoons water

Put the raspberries, sugar to taste and lemon juice in a blender or food processor and process until smooth. Press the puree through a fine strainer to remove the seeds.

Pour the mixture into a 1-quart microwave-safe dish and microwave on High (100 percent) for 2 to 2 1/2 minutes, until boiling.

Stir the cornstarch and water together to form a smooth paste. Add this to the raspberry mixture, stirring to blend. Microwave on High (100 percent) for 1 to 2 minutes until the sauce is bubbling and thickened. Serve warm or cold.
